Roasted Potatoes with Garlic and Rosemary

Ingredients:

2 lbs. (about 25) new potatoes 2 T. chopped garlic 1 T. fresh or dried rosemary leaves 1/2 c. extra virgin olive oil Coarse salt Pepper


Directions:

Preheat oven to 375°. Place potatoes in roasting pan or ovenproof dish. Add rosemary, garlic, olive oil, salt and pepper to taste. Turn potatoes to coat in seasonings on all sides. Roast, turning potatoes occasionally, until they are tender, about 35-45 minutes.
