Simple Roasted Garlic Puree

Ingredients:

5 heads of garlic 7 T. olive oil Salt and freshly ground pepper 1/4 to 1/2 t. crushed red pepper flakes 1 t. soy sauce


Directions:

Using the garlic, olive oil, salt and pepper, roast the garlic. Let the heads cool and reserve the oil. With kitchen shears gently cut the cloves away from the bases. Snip the pointed tip of each clove and squeeze out the soft bulb of garlic. Place the cloves in a blender with the pepper flakes, soy sauce and 3 T. of reserved olive oil. Blend until the mixture is pureed but slightly grainy. To store, pour a thin layer of olive oil on the surface (and mix in when ready to serve).
