Skirt Steak with Chipotle Spice Rub

Ingredients:

1/4 c. canned chipotle peppers and sauce Juice of 1 lime 1-1/2 t. toasted and ground coriander seeds 1-1/2 t. toasted and ground cumin seeds 1 t. coarsely ground pepper 2 lbs. skirt steak Kosher salt


Directions:

In a small bowl, mash the peppers with their sauce. Mix in the lime juice, cumin, coriander and pepper. Rub all over the steaks and marinate in the refrigerator 2 hours. Allow steaks to rest out of the refrigerator 30 minutes before cooking. Preheat the broiler. Season the steaks with salt and broil until done, about 3 minutes per side for rare.
