Smoked Chile Scalloped Sweet Potatoes

2 c. heavy cream 3 medium sweet potatoes 1 T. chipotle pepper puree Salt and freshly ground black pepper
Directions:
Preheat oven to 375°F. Peel potatoes and slice thin, about 1/8” thick. Whisk together heavy cream and chipotle puree until smooth. Butter a 9” x 9” casserole and arrange the potatoes in a single layer. Drizzle with a tablespoon of the cream mixture and salt and pepper. Continue layering and drizzling until all the potatoes and cream have been used, about 10 layers. Cover and bake 30 minutes; remove cover and bake 45-60 minutes additionally, until potatoes cooked through and the top is browned.
