Spicy Tomato and Basil Bruschetta

Ingredients:

4 ripe tomatoes cored and cut into 1/2” dice 1/2 c. coarsely chopped Oven-Dried Tomatoes 1/2 c. julienned fresh basil leaves 1/2 t. salt 1/4 t. freshly ground black pepper 1/4 t. dried red pepper flakes 12 slices thick country style italian bread 3 T. extra virgin olive oil 1 T. roasted whole garlic


Directions:

Preheat the broiler. In a medium bowl, combine the fresh and oven-dried tomatoes. Add 1/3 c. basil along with the salt and black and red peppers. Toss well and set aside. Broil or grill the bread until golden brown on both sides, 1 to 2 minutes per side. Transfer to a platter. In a small bowl, stir and mash together the olive oil and roasted whole garlic. Brush it over the top of each piece of bread. Using a slotted spoon to drain off excess liquid, divide the tomato mixture among the bread slices. Garnish with the remaining basil.
