Stilton and Onion Soup

Ingredients:

3 oz. butter 1 Spanish onion 6 oz. Stilton cheese 3 oz. flour 4 c. chicken stock 1 bay leaf salt and freshly ground black pepper 1 c. heavy or light cream


Directions:

Melt the butter in the pan and add the sliced onion. Fry until gently soft and then add the Stilton. Stir with a wooden spoon until the Stilton melts to form a smooth cream. Add the flour and cook 5 more minutes, stirring all the time. Add the chicken stock, bay leaf, and seasoning. Bring to a boil and simmer 20 minutes. Remove the bay leave. Add the cream and serve immediately.
