Sun-Dried Tomato Dip for Seafood

Ingredients:

2 T freshly squeezed lemon juice 2 T minced sun-dried tomatoes 1/2 t Dijon-style mustard salt and pepper to taste 1/3 cup olive oil


Directions:

Combine lemon juice, tomatoes, mustard, salt and pepper and whisk until salt is dissolved. Slowly add olive oil and whisk constantly until the mixture thickens slightly. Taste for seasoning.
