Thyme Carrot Soup

Ingredients:

6 c. chicken broth 1-1/2 lbs. carrots, cut into thirds 1 onion chopped 6 T. butter 1/2 c. heavy cream 1-1/2 t. thyme Dash nutmeg Salt and pepper to taste


Directions:

In a large pot. combine the broth and carrots and bring to a boil. Simmer, uncovered, for 20 minutes or until carrots are tender. Place in a blender and purée in batches. Force the purée through a sieve into a large saucepan. In a small skillet, cook the onion in the butter over moderate heat for about 3 minutes or until soft. Combine onion and purée mixture and add heavy cream, thyme, nutmeg, salt and pepper. Bring to a boil and simmer 5 minutes. Let stand, covered, 5 minutes. Garnish with thyme.
