Tomatoes Nicoise

Ingredients:
1/4 c. olive oil, divided 2 garlic cloves, minced 2 c. finely chopped onions 6-8 large ripe tomatoes, sliced 1/4 c. chopped fresh parsley 1/4 c. chopped fresh basil 2 T. chopped fresh chives 3/4 c. herb stuffing salt and freshly ground black pepper
Directions:
Heat 2 T. oil in a large skillet. Add garlic and onion and cook, stirring frequently, about 5 minutes. Spread this mixture over a 9” x 13” glass baking dish. Top with sliced tomatoes. Mix remaining ingredients and sprinkle on top. Drizzle with remaining oil, and bake in preheated 350°F oven for 25 minutes until lightly browned.
