Triple Chocolate Pudding Pie

Ingredients:

1 ½ cups crushed chocolate wafer cookies 1 tablespoon granulated sugar 1/3 cup unsalted butter, melted 1 ¼ cups granulated sugar ½ cup unsweetened cocoa powder ¼ cup cornstarch 3 ½ cups half and half cream 4 large egg yolks 3 ½ ounces semi-sweet chocolate, chopped 3 ounces unsweetened chocolate, chopped 2 tablespoons unsalted butter 1 teaspoon coffee liqueur 1 teaspoon vanilla extract 1 cup chilled heavy whipping cream 2 tablespoons granulated sugar 2 teaspoons instant coffee ½ vanilla bean To Serve: chocolate-covered espresso beans


Directions:

1. For the pie base: wrap the biscuits in a tea towel or put into a plastic bag and pound into crumbs with a rolling pin. 2. Pour into a bowl and stir in the melted butter with a fork. Tip into the base of a pie pan and press down, covering the bottom of the pan with the buttery cookie base. Scatter over the chocolate chips. 3. Preheat the oven to 180C/gas 4. 4. For the dream cake mixture: put the cream cheese and eggs into a bowl and whisk until blended. Add the condensed milk, vanilla and lemon juice and mix well. 5. Pour the mixture over the chocolate chip cookie base. Top with the marshmallows. Cook in the oven for 30 minutes or until the marshmallows are golden brown and the creamy centre has set. 6. Remove and leave to cool, then refrigerate for at least 2 hours, or for best results overnight.
