Upside-Down Chocolate Pudding

Ingredients:

1 ounce (1 square) baking chocolate 2 tablespoons butter 1 cup all-purpose flour 1 1/2 cups sugar 2 1/2 teaspoons baking powder 1/4 teaspoon salt 1/2 cup milk 1 teaspoon vanilla extract 1/2 to 2/3 cup coarsely chopped nuts (I replaced these with chocolate chips!) 1/4 cup firmly packed brown sugar 2 tablespoons cocoa powder (preferable Dutch processed) 1 cup cold water


Directions:

1. Preheat the oven to 350F. 2. Grease an 8-inch square baking dish 3. Melt the chocolate and butter in a small saucepan over low heat 4. Meanwhile, stir together the flour, 3/4 cup of sugar, the baking powder, and salt in a medium bowl. 5. Stir in the milk and vanilla extract, then add the chocolate mixture and beat until smooth. 6. Stir in the nuts and pour the batter into the prepared baking dish 7. In a small bowl, stir together the remaining 3/4 cup sugar, the brown sugar, and cocoa powder until smooth. 8. Sprinkle evenly over the pudding batter 9. Pour the water evenly over all 10. Bake for 40 to 50 minutes, until the top layer appears set 11. Serve warm
